Animals have different behavior types. A passive animal will ignore the player and attempt to flee when attacked. The passive-aggressive animal will ignore the player, but will become aggressive when attacked. The aggressive animal will attack the player on sight. Knowing an animals behavior will prepare you when approaching them.
All animals have a set amount of hitpoints. When an animal is attacked its hitpoints are decreased based on the weapon damage. When the number of hitpoints reaches zero, the animal dies and drops items.
